I found this simple recipe in a cookbook and modified it to get it just right (according to my family). These lasagna roll up’s are super easy to make, especially when you are tired from a long day at work (or hiking).
INGREDIENTS
(12) Lasagna Noodles cooked & drained (I used the great value brand)
(1) 10 oz pkg of frozen chopped spinach cooked and squeezed dry (I used Birds Eye Brand)
(1) large egg
(1) 32oz tub of Ricotta Cheese (I used Simply Kraft Reduced Fat, not pictured)
(1) 48 oz jar of Chunky Ragu (or any other pasta sauce)
4 tablespoon Parmesan Cheese grated (I used Great Value Brand)
1/2 teaspoon of salt
1/4 teaspoon of pepper
1/8 teaspoon of ground nutmeg
(Side Note: I used different brands for the picture above than what is listed, simply because I forgot to take a picture when I originally calculated the calories which are listed at the bottom).
DIRECTIONS
Preheat oven to 350
Cook lasagna noodles.
While lasagna noodles are cooking, cook frozen spinach according to package directions.
While noodles and spinach are cooking make the “stuffing” for the roll-up: Fork beat an egg in a large bowl. Mix in Ricotta Cheese until well blended. Add parmesan, salt, pepper, and nutmeg and mix well. Add in cooked and hand-squeezed dry frozen spinach and mix until well blended.
Once the noodles are done lay them flat on a piece of wax paper and place roughly 3-4 tablespoons of cheese mix on a lasagna and spread evenly. Roll each noodle by starting from one side and rolling towards other side. Place seam side down in a greased 13″ x 9″ x 2″ glass baking pan. Repeat with the rest of the noodles. Once all noodles have been rolled pour pasta sauce over the roll up’ s evenly. Cover with foil and bake for 45 minutes in a 350-degree oven or until heated through.

PREP TIME: 15 minutes (10 of that is boiling noodles)!
